WOW!! The past 5 days have been a whirlwind. My littlest caught RSV and it has been a crazy ride. Let me tell you, it’s not fun AT ALL! Thankfully we are on the mend. With that being said, I needed a super easy dinner to make that would allow me to throw together and let cook while I spent time with my sick babe.
Let me introduce you to the easiest and yummiest dinner you’ll eat all week!
Slow Cooker Chicken and Gravy! Literally took me maybe 10 minutes to put together. So keep reading and watch how this comes together so well!
First, I started with about 2lbs of chicken boneless skinless chicken thighs. You can use chicken breasts, but this is what I had in my freezer. I sat them in the crockpot and season them with salt, pepper, and a dash of garlic salt (because who doesn’t love garlic?!).
Next you’re going to mix a can of cream and chicken, 2 packets of chicken gravy, and I added a 1/2 cup of chicken broth (if you had the broth I suggest adding more chicken). Then you will pour over the chicken!
My chicken was slightly frozen, but I still turned it on high for 4 hours! If your chicken is frozen solid I would do about 5-6 hours. Now just put the lid on and wait!
So, what do you eat with this you might ask. It can go with a multitude of things! I picked mashed potatoes last night because they are my FAVORITE. This could pair well with rice or even topped over broccoli. Instant potatoes was the way to go, because let’s be real….I did not have time to make real mashed potatoes! LOL
Once your chicken is done it will be nice and tender! I cut it up in pieces so it was easier to eat! I also paired it with a side of green beans! Check out this yummy dish!

3 to 4 boneless skinless chicken breasts
1 (10.75-oz) can cream of chicken soup
2 (0.87-oz) envelopes of chicken gravy mix
1/2 cup water or chicken broth, optional
Hot steamed rice OR mashed potatoes
Place chicken in the slow cooker and season with salt and pepper, if desired.
Whisk together soup, gravy mix, and water (if using). Pour over chicken.
Cover crock-pot and cook on HIGH for 4-6 hours.
Before serving break the chicken breasts into bite-sized pieces.
